Grandma Lucy was Richard’s mother and truly one of a kind. She did everything her own way, from bleaching her hair in the 1950s to standing outside barbecuing in the rain with an umbrella, just to keep the house perfectly clean. Strong-willed, sharp, and unapologetically herself, she loved tuna fish more than anything, which is why this sandwich is hers.

Roman is Regina’s only son and, in her words, “just annoying.” Growing up, he always wanted more protein and more flavor, never leaving well enough alone. That instinct turned into a sandwich built his way, sliced chicken layered with pesto, peppers, and balsamic. Lean, bold, and a little extra, just like Roman himself.

Ricky really Richard is Pops Regina’s right hand husband and lifelong dancing partner. For a short period of time he swore he was going vegetarian in our house. It didn’t last long but we couldn’t let him live that down.
